I harnessed my inner IrishGuy and tried something more ambitious than my usual backstrap recipes. I looked up 4-5 different recipes, and combined all I liked out of each of them. It paid off, and the wife said it was her all time favorite (deer) meal.

I trimmed all the junk off, as always.

Then cut it in half and butterflied them open, rolling them as I cut it, trying to keep it 1/2” - 3/4” thick or so. I then scored it the inside, I figured it might help with flavor

I then hit the inside with some minced garlic and black pepper. Then coated with goat cheese.

All the while, I had some chopped white onions and mushrooms going in some bacon grease in a skillet. I put the (cooked) bacon on the goat cheese, then some spinach, then the onion/mushroom mix.

I rolled them up with some butchers twine making them into pinwheels of sorts. I then coated the outside with olive oil, and rubbed on some peppercorns I cracked, and some bread crumbs.

Put it in the oven on 400 for 20 min and it was awesome
