I've been eating muffin pan omelets for breakfast. Sauté peppers, onions, and mushrooms in a skillet. You could add meat but I have chose not to at this time. Fill up muffin pan about halfway and then fill to top with egg. Bake for about 20 minutes at 375 and you are good to go. Easy breakfast to heat up and walk out the door with.


How long will these stay good in the refrigerator? You just pop them in the microwave each morning to reheat? Interesting concept that I'd like to try.
