After soaking steaks on ice for days to get all the blood and gamy taste out, adding Eyetalyan Dressing would be a fine addition. Probably could wrap some bacon around them, too, before drenching and grilling.
Just make sure you soak that sucker in Dale's sauce for overnight before you cook it. That way you can add some good flavor to it. Also, it wouldn't be worth a flip if you don't have some A-1 to slather it up with when it comes off the grill.

Beef doesn't carry bacteria like chicken or pork. While the meat may not carry bacteria like poultry, folks is kitchens still do. Depending on the cleanliness/handling of the meat at restaurants, still may be taking a (very low) risk. But I'll take mine MED Rare Beef can have bacteria, but on a steak it should all be on the outside. That's why hamburger needs to be fully cooked. There's also other diseases that can be in rare beef. I don't want mine overcooked either but in reality you are taking a chance every time you eat anything that hasn't reached 160 throughout.Probably taking a bigger chance though every time you get behind the wheel of a vehicle and drive down the road. Do a focus group of everybody you know that eats their steak rare and their hamburgers rate of medium rare, ask them how many times they have ever gotten sick from it, and I bet the average answer will be none. You have to go through some seriously nasty conditions to contaminate beef. You don't just have to have nasty conditions. You might have an infected animal. Fortunately it is very rare,but it is a possibility.I thought that I made my point that is is a risk but a low risk that many folks seem to be willing to take.

1. I couldn't care less how anyone else orders their steak. People want what they want, they like what they like, and it's not my business to try to change that.
2. I order mine extra rare. If I get it extra rare, perfect. If it's overcooked to rare, which most times it is, it's still edible for me.
3. If I have people over and I'm cooking steaks, I'll cook their steaks how the want them. I want them to enjoy the steak. I invited them over to feed them, not to pass judgement on them.

After soaking steaks on ice for days to get all the blood and gamy taste out, adding Eyetalyan Dressing would be a fine addition. Probably could wrap some bacon around them, too, before drenching and grilling.
One part you're forgetting: you got the ice soaking part right, and the dressing/bacon wrap ... but you're forgetting to soak for 24 hours in Dales just prior to grilling. That's sort of the "coup de grace" for knocking out the final gamy flavor.

I cant stand cooking for folks like my inlaws who like well done steaks. If its got any pink at all then they want it cooked more, if it has no pink its too tough. You cant make them happy. Theyll have you out at the grill slaving over their piece of boot leather while your perfectly cooked ribeye sits on the table getting cold. I came up with the best possible solution. (This keeps me from looking like a dumbass who cant cook a steak) I throw all the steaks on the grill at the same time, when all the steaks that belong to the normal folks who like a steak between medium and rare get done, i tent them and let em rest for 5 minutes while telling the others that their steaks are still on the grill and to have fun cooking them. After us normal folks get done eating, we get an after dinner comedy show watching people smear ketchup on a burned 15 dollar peice of meat and hacking at it with a knife and bitching about how tough their damn steak is.

Best steak i ever ate was at Big Mikes cant wait to go back Why would anyone order a top cut filet and have it cooked well done?
Witnessed this twice at Big Mikes in Thomasville.
