Been watching "Meat Eater" a lot lately and notice Rinella always keeps the heart and liver (and maybe a couple of other organs). He's got a couple of recipes on his site for deer heart, and I'm a little intrigued.

Anyone here eat it? How would you describe the taste? Seems like it would have a strong bloody taste, but maybe not? How do you cook it?

I love the show "Meateater". I've been thinking the same thing. I've read where you can soak heart in buttermilk, i believe to draw out blood. I like to soak meat in a brine of saltwater to draw out blood. If i remember, i'll keep the heart next time. I've kept the liver and cooked it, it taste like liver, it was good i just not a big fan of liver except chicken livers.

It's a heart. If you eat beef,pork, chicken hearts you will eat deer heart. We clean it and cut into strips and put it on a hot grill and cook to a medium. Fine eating.


It's hard to kiss the lips at night that chews your a$$ all day long.

Been eating them for years.First thing I eat. Usually cooking them and processing the meat at the same time. Fried deer heart and hot sauce!!1

I have tried it fried. Not my favorite part of the deer to eat but not too bad either.

I've had it a few times when I was younger. I remember it being quite good too but can't remember it enough to describe or compare it to anything else.

It is my favorite part. Google "pickled deer heart" and take your pick. My family starts asking for it as soon as I tell them I kill a deer.

I love the heart!!!!

Slice it in small pieces, marinate a little and then wrap it in bacon and grill it.

Or you bread and fry, either way is outstanding!

I eat it the heart and liver. Grill the heart and fry the liver.

Heart tastes similar to the liver but not as strong.

My dad loves it! Stick a hose in the ventricles run all the blood out, and cooks it on the grill medium rare like beef filet. He's gonna be at the camp all week and this year he wants to get some tongues to eat. His Columbian MIL makes banana leaf beef tongue that's outta this world so he figured he try deer

We had some New England trappers here one year staying and trapping on the land I hunt. Interesting characters that would clean our deer for us if we gave them the hearts and livers. Couldn't beat that since it was and still is throw away parts to me.

The hearts were their favorite. They would slice them and then just sautee them in a skillet with butter, bell pepper and onion. They raved about putting the leftovers on a sandwich the next day with a lot of mayo.

Being polite one day, I broke my usually steadfast rule against eating innards and tried a piece when offered. Tasted OK, like any other deer meat, but very chewy is the only way to describe it.


Lord, please help us get our nation straightened out.

He doesn't cut off the ventricles (top) and clean out the inside of the heart before grilling?

I grew up eating both heart and liver. It was the first meat we ate from the deer. We cut it across and fried it like bacon with some butter or oil. The liver we cut up and breaded like country fried steak with onions and maybe some peppers.

It was good stuff. Of course I also ate chitterlings and sweet breads so heart and liver were no big deal for me.
