A absolutely love hot sauces. But as mentioned by someone above, when you can no longer taste the food you put it on, what's the point? The trinidad scorpion, bhut jolokia, red savina, etc, are good, but only if you don't get the attitude that you have to have just a little more than you can stand, or, I can eat it hotter than you. That said, I keep at least one bottle of unbelievably hot sauce in the fridge. It gets added sparingly to chili, spagetti, bbq sauces, etc, to add a little heat and enhance the flavor. Even better than the sauces, is the fresh peppers I grow every year. A fresh jalepeno is much hotter and better flavored than some that have been soaking in vinegar for six months. I like a burn, but not blisters.

We got some "Shotgun Willie's" in San Diego many years ago. It was XXXX and two or three drops would ruin a whole pot of chili.

Some of the best hot sauce I have had(and I have some right now) is made in the west Indies. It is more ground up scotch bonnets and some vinegar than thin sauce like tabasco. It is hot but has an awesome flavor. I too like spicy, but I like the flavor of GOOD hot sauces, not just the burn to burn

Got a bottle of this and a bottle of Matouks in the fridge now

Them dragon cayennes broke me the other night for awhile. Just Texas Pete and Tabasco for me for awhile.

Texas Pete, Louisiana, or Crystal, for me. Very slight heat and lots of flavor. Tobasco is a little hotter, but seriously lacking in flavor.

I like Crystal's. Tobasco is too vinegary for me.

Texas Pete has a "extra" hot version that is perfect for me if I don't want the ultra hot ones (which I do sometimes). Crystals has a version too.

not sure what the best way to handle them is but they shouldnt be on tv and gettn married and raisin kids

I keep a bottle of crystal at the house but my favorite is gator hammock. Only place I've found it local was firehouse subs, other than that you have to order it at $10 a bottle.

I love Tapatio, right now though I just eat peppers with the juice they are in, can't think of the brand but they are not Jalapeno's, real small and the longer they sit the hotter they get. Always find it amusing when people talk about how hot Jalapenos are.

Got burned out on Tobasco sauce in the Army, that was the seasoning for all MRE's out in the field.

Most of the time jalapenos are reasonably tame, but I have some fresh ones here that will lightyoazzup. I cant tell any difference in them and the orange habaneros that I grew last year.

You not talking about those pepperoncini (spelling) peppers are you? The ones they put in papa john pizza boxes? I love those. I don't want a sauce any hotter than the dragon cayenne peppers I grow in the garden. Some are mild but I have one plant that's almost unbearable

It's not the pepperoncini peppers that I have right now, not sure what hey are. My B.I.L. is from Mexico so I thought he would have some really hot peppers, my other BIL was just talking up these peppers they were eating about how hot they were but they were pretty tame in my eyes.

Now I can't eat them like I used too, but I still on occasion like a chopped up Habanero in a bowl of chili.
