Most shops are only going to pay you for the metal value. I would check out http://replacements.com/ They buy old (and new) patterns and will offer more than scrap prices. Remember when you are figuring the weights that knives usually have stainless handles. The sterling knives are usually about 12 dpt (pennyweight). The stainless is kinda worthless and to remove the sterling handle from it is a pain in the ass. Most are attached with glue and the handles are pasted into place to make the handle seem heavy. The handle is really just a thin skin PM me if you have a question...
