A solid choice, no doubt. It's hard to beat a good patty melt. Maybe add a little A-1 and it's even better.

My go-to is the bowl with hash browns, sausage, four scrambled eggs, onions and jalops. Two of those are going to be hot - the hash browns and eggs - and the onions will be if I ask for grilled. Coffee, of course.

All star with the fried eggs over medium mixed in with the grits. Patty sausage on the toast with Heinz 57. Waffle smothered in butter and soaked in syrup. Coffee with cream.

Ain’t no way I could do it. The training they do is fantastic because they train every cook in every store to produce a consistent, repeatable flavor. Not to mention they can handle 20 orders simultaneously

That's a dance that takes some skills, not to mention diplomacy with fellow staffers and the general public.

Reminds me of this story in The New Yorker about Las Vegas, cooking there in diners and casinos, and the 24/7 life.

I've eaten in Vegas at all hours of the day and night, everything from steaks in fine joints to breakfast at 3 or 4 a.m. Can't remember a meal I walked away from where I thought, "That was dogshitgarbage." If you're not good there, like at Waffle House, you don't last.

A lot of the cooks were cooks in the military and some are on work release. Discipline, paying attention to detail comes with the military training. I don’t want to go back to that shithole prison comes with the other.
