Dropped a deer off with them one month ago today...was told it would take at least another week. That is way too long....just an fyi for anyone around birmingham.

For what it's worth the guys I've met there seem really nice and I had heard good things about them, I hate to come on here and just bash someone because of one experience....

IMO - I think there are two things to consider.

Beef typically isn't hung in a damp cooler with a bunch of cows that have the contents of their stomach's smeared all over the inside of the carcass, from either being gutshot or poor handling by the hunter.

The other reason has to do with the thicker cuts and the drier air.

So I called one last time to check on my deer....shockingly it still wasn't ready. I let them know that when it did come up to cut it however they wanted because it was now there deer. I'm not sure what I expected him to say but all I got was an "okay". Really pisses me off because it was the only deer I shot this year due to us moving in December.

Stay away from these guys....

Had the same issue I gave one to my brother in law took him over a month to get it back and he tried to cook some it and it was bad sick different processer thou . You made the wright decision.

X2, I'm gonna drop this right here.

After the Do it yourself processing thread a while back I aged my own in an extra fridge for 6 days. I studied some more on it and decided to separate grained muscle groups leaving silver attached. I got freezer double zip bags and additionally wrapped and taped with freezer paper. When I take one of the small roast out of freezer I thaw open in fridge and trim and cut for cooking. Makes a pretty good meal. Just another good education from Aldeer!

Where I do most of my hunting we have excellent facilities to butcher the deer ourselves...I typically take it to the processor out of convenience and hopefully to help out local business.

However, I really love to cook and this experience has really made me want to take matters into my own hands.

Expert opinions needed --- I left a deer at The Chopping Block in West Blocton a little over three weeks ago. Called yesterday and it is still not ready. How long is too long to wait before processing a deer? I am a little spooked about how safe it would be to eat. Should I just tell them to keep it? (I have heard rumors that some processors sell unclaimed meat at the end of the season. Any truth to that, or am I just one of those suspicious bastages ? )

This may be off subject a little but I use lynn in holt, never had an issue. Fair prices good work. Usually 4 to day turn around
