Y'all missin the most important step. After the crawfish are boiled lower or shut off fire and dump a bag of ice on top of crawfish. The sudden drop in temp shocks the shell and causes them to suck in a lot of the seasoned water. Just have a large hand towel or a roll of good paper towels because u fixin to get messy the way to your elbows. Try it and y'all will thank me!!!
