Just in case I do get lucky, does anyone have any suggestions on where to take a deer to get processed? I'm probably going to do burger, summer sausage, and a little jerky.
I live in Hoover area so somewhere in vicinity of Bham preferably.

Trails End a block up from Lowes in Bessemer. He's real good and reasonable. Vacuum packs.

I am decent with skinning them, will most places take a skinned deer? Figured that would save me some of the cost.

Yeah, they will. Cost is no different to skin it at trails end. $25 to gut it though.

Jerry's in Oxford is by far the best in my opinion. I use Edmondson's off exit 238 alot due to location of my house.
