That looks good. I've never done that.
What about serving it with some kind of sauce or gravy on top of it? How would that be? I don't know how that would be. It's so good without it, I'm afraid to try it. LOL. I 've thought about making it with a pot of pintos or white beans or maybe some red beans and rice. To make it, I brown some breakfast sausage and onions. Then I make my normal mexican cornbread (with cream corn, chopped jalapenos, and cheese) mix. I pour half the batter in the pan, add a layer of cheese and the browned sausage mix, and then pour the remaining batter on top and bake it. I started out using the Martha White sausage cornbread bake recipe and changed to our liking from there. That sounds really good. I like the idea of having it with beans and greens or with red beans and rice.
