It's nice just to have a tasty high protein snack sitting around the place. Pull it out of the fridge. Put it on a Triscuit. Eat a bunch of 'em.

I like to use canned chicken in mine. For some reason the texture is just better and it has great chicken flavor too. I use leftover chicken, smoked chicken and rotisserie chicken sometimes, but we always try to keep cans of chicken around.

Canned chicken - Drained (I drink the juice out of the can grin)
Celery - Finely diced
Onion - Finely diced
Dried Cranberries - Chopped
toasted pecans - Chopped
Mayo
Salt
Pepper

If you use anything but canned chicken I recommend some lemon juice or additional mayo to get the consistency you want.

Boho thinks adding onions is blasphemy...


This pic will give you an idea of the ratios I used for the various ingredients. That's 2 big cans of drained chicken. I used about 1/2 cup of Dukes.

But I like them. I think a sweet component is necessary in there for some reason.

Onions are a yankee affection, sirs. Too strong for such a delicate southern lady palette.

I do not turn down my man's foods... unless the pork and sausage are a little too swiney ;-) which is none of his doings.

Plain chicken salad for me. Bake chicken, shred. Mayo, boiled eggs, mustard, relish, salt and pepper. Maybe some hot sauce!

I have never had chicken salad with eggs or relish in it thank goodness. Now tuna salad, yes, we will put that in it.

Chicken Salad Chick, Olivia’s Old South has relish but don’t think it has chopped egg. One of my favorites.
