It's nice just to have a tasty high protein snack sitting around the place. Pull it out of the fridge. Put it on a Triscuit. Eat a bunch of 'em. I like to use canned chicken in mine. For some reason the texture is just better and it has great chicken flavor too. I use leftover chicken, smoked chicken and rotisserie chicken sometimes, but we always try to keep cans of chicken around. Canned chicken - Drained (I drink the juice out of the can  ) Celery - Finely diced Onion - Finely diced Dried Cranberries - Chopped toasted pecans - Chopped Mayo Salt Pepper If you use anything but canned chicken I recommend some lemon juice or additional mayo to get the consistency you want. Boho thinks adding onions is blasphemy... This pic will give you an idea of the ratios I used for the various ingredients. That's 2 big cans of drained chicken. Chicken Salad Chick, Olivia’s Old South has relish but don’t think it has chopped egg. One of my favorites.
