I took the youngest and a friend snapper fishing yesterday. It really wasn't our day, but we did manage to bring home 3 decent one's. Figured I would do blackened snapper tacos tonight. This time I added the mango salsa based on Pwyse's suggestion. I had never made it, but dang, that is an excellent addition to fish tacos!
