Never added the egg (sounds like a game changer - I WILL give that a shot), but there might not be another sandwich than smoked bologna (or fried) and pimento cheese sandwich. My wife has given up on asking me what type of sandwich meat - it is ALWAYS bologna.
My Mom used to buy a tube of bologna and we'd cold smoke it - that was always the best, my wife would gag while the rest of us ate it as if it was prime rib. I love me a fried smoked bologna sandwich. Thick cut on that Texas toast. A good slice on a biscuit with tomato and onion it's good too. If I had to choose it'd be neck and neck. I might try Pimento cheese if it didn't have that nasty ass French abomination of mayonnaise in it.
