My wife makes pimento cheese a few times a month. Homemade is a game changer vs the store bought. I’ll happily eat both versions though. Excellent on a hamburger Orin an omelette.

The Pawley's island stuff is the best. From South Carolina. Costco has it $2 cheaper than Walmart. $6.99 a tub both jalapeños and plain. Mrs. MW uses it as topper for baked portabello mushrooms. See pictures on some of my buffet thread posts here. Really good.

It's good on a thick juicy hamburger and you should add it to your mashed potatoes along with a little sour cream.

Boho makes the best minner chee I have ever had. Ha!!! I wouldn't eat it as a kid because I thought that was what my mom was saying. I thought cheese with minnows in it sounded disgusting.  I like it now though.

It ain't hard to make.
Just know that if the recipe doesn't call out Duke's mayonnaise, it ain't a good recipe.
And fresh grated cheese, not that bagged crap full of sawdust.
Real secret is smoked paprika, not plain. Didn't realize it was that easy to make. Gonna try.

The best I've ever had is made by an old baseball teammate's wife. She puts just enough jalapeno in it to give it some flavor but it isn't hot, at least not to me. She calls it Kim's Kickin Pimento Cheese. If in the Selma area and have a hankering she stocks it in Dave's Market and Mark's Mart. I don't know if the Mark's in Northport has it or not. At one time I know the Renfro's in Montgomery carried it. Anyways, it's the real deal made in her kitchen. I've been known to make a meal out of it and Ritz Crackers. Not a fan at all

The wife unit strolled thru at publix last week and done the same thing, only she bought one tub with jalepeno's for her and me a regular tub...Had a smoked bologna, egg, and pimento cheese sandwich that was the bomb...  Never added the egg (sounds like a game changer - I WILL give that a shot), but there might not be another sandwich than smoked bologna (or fried) and pimento cheese sandwich. My wife has given up on asking me what type of sandwich meat - it is ALWAYS bologna. My Mom used to buy a tube of bologna and we'd cold smoke it - that was always the best, my wife would gag while the rest of us ate it as if it was prime rib.

Y'all are some of the most creative food folks I've ever experienced!
When I make it, it's a real treat. And you do have to shred the cheese. If you attempt to use bagged shredded cheese, you will quickly find out why you can't use it. Not only will the texture be off but it will not coagulate (?) into the spread you're looking for (because of the anti caking substance used in those bags). You can go all over the place with variations of cheeses and additives. I use Cabot's block cheese, Seriously Sharp. You can buy a 2# block for not really much more than the store brand and the flavor is superior and worth any price difference. If you grate a fresh garlic clove on a microplane into the batch, it will permeate the whole thing and add a real kick, so much so that you really don't need jalapenos or cayenne. That's a little trick I learned with the last batch I made. And it will last for some time in the frig... should it get the chance. Clearly no one needs any suggestions on how to eat it!

I forgot to add that if I smoke a batch of cheese during the winter, I make at least one batch of pimento cheese with some of it. Now that's good.
