Apparently ii is an old way to kill the octopus. You bite it behind the eyes and it severes the nerves to the multiple brains. If you do it right, it doesn't leave a wound so it sells better in the market once he gets it back to shore.

The octopus was literally fighting for its life. Super intelligent creatures.

Diving with a group off the coast of Guam in 1993 and we were in an area where an octopus was known to live and it liked to be fed. It was said to be about 3 feet across when all spread out. A couple of the divers had cans of Vienna Sausage to feed it if it could be spotted. Sure enough, it came out of hiding and they fed it. Then they 'passed it around' by letting it climb one arm, go across their back and down the other arm. We all lined up, joining hands in a human chain and that sucker climbed across every one of us. I was quite nervous when it went across the back of my neck but it just kept going. The skin was a weird thing. It felt like the finest silk that had ever been made.

Supposedly very intelligent and some folks won’t eat them because of that

Several of the shows I’ve watched about catching them use that method to dispatch them. It’s cheap and effective.
