I didn't think the Shwarma I made the other day was my best effort, so I kind of rebooted what I wanted to do. I wanted more char on the chicken so I cut it into chunks, marinated the chicken the same way with: yogurt, salt, pepper, chili powder, cumin, onion powder, garlic powder, red pepper flakes and some Zing Zang bloody mary mix, and then stuck them all on kebabs and grilled them on Baby Kamado.

These turned out just the way I wanted them too, almost exactly like Tandoori Chicken. We will 100% be doing this again.

Boho was on the salad and the rice. She always toasts that rice in butter before adding the water and it really makes a difference. We topped the salad with marinated onions, cucumber and tomatoes and some Feta cheese.

Looks good Irish. I've had to adjust my diet after the last doctor visit, high cholesterol. That meal right there looks like it would fit in with my new diet nicely. I've been cooking a lot of Greek lately. Doc wants me on statins but I'm going to do my very best to lower my LDL's with diet to avoid them.

If you're using chicken breasts like I did make sure you use whole fat Greek yogurt. You want the extra fat. I forgot to add in some lemon juice in there. Remember that too.

I rarely measure anything unless I'm baking, because baking is a science project.

I just cut the chicken up into chunks and then into a bowl I put about...

2 tbsp Full fat Greek yogurt
2 tbsp Bloody mary mix (or 1 tbsp tomato paste)
juice of 1/2 a lemon
1/2 tsp salt
1/2 tsp pepper
1 tsp chili powder
1 tsp cumin
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp (smoked) paprika

Those numbers are guesses. Look at the first picture and the consistency should be about like a chocolate shake.

Mix all that and let the chicken marinade in it for up to 24 hours. I just put a plate over the bowl and let it sit in the fridge for a couple of hours while we had cocktails.

Skewer on water soaked sticks and grill on high turning regularly to cook evenly.
