They look good. Mine didn't ripen all at once. I've got 30 different peppers. 5 or 6 varieties. The Hossinator, Cinder, megatron and Colossus. I honestly forgot which was which. Markers faded.
I planted 4 of each of those. Then a bunch of different mild peppers. Some of mine get about the size you have in the photo. But they don't ripen at the same rate and aren't all that big when they change color.
I've made efforts to leave them alone to get as big as they can, but when they change color I pick them. About once a week I use the larger ones to stuff and wrap in bacon, eat it as dinner.
About every two or three weeks, I cut the little ones that ripened up and pickle them. Not sure if I'd rather pick them all at once like you or eat as we go, like we are doing. I'm not sure what I'd do with 10 gallons of peppers that size all at once.
Character is not developed in moments of temptation and trial. That is when it is intended to be used.
