Is wild hog as different from store bought pork as venison is from beef? (I know same vs different animals)

Can you just throw wild hog on the grill, fry it, etc? Or do you need to marinate it, tenderize it, pressure cook it, slow cook it, etc?

Never dealt with them much, but looks like I am about to. This is just a normal evening photo. 50lbs of corn doesn't last very long.

Land I bought few month back near Cuthbert GA.

It's a little drier than store bought.

This will vary depending on how much corn is available from feeders in the area but wild is going to be leaner than those from a feed lot. Pre-cook treatment would be determined by how you intend to cook which parts and for how long. Sows are good and boars under 100# are usually free of “taint”.

That makes sense - 10x less fat. Does it burn much easier? Do you need to cook it on lower heat?

The old standard of always cooking pork until well done is no longer true, eating it medium rare is fine (per USDA guidelines). EXCEPT for wild pigs, imported pork and (surprising that they mention it) bear, all of which should still be cooked to well done. The "well done" standard was to prevent trichinosis which has been largely eradicated in the US commercial pork industry but is still likely in wild pigs and imported meat.

Wild pig up to at least 120 lbs (largest one I've shot) is very good eating. Just make sure to cook it thoroughly.

I killed two that weighed about 10 lbs each live weight (combined live weight of 19 lbs). After skinning and cleaning they looked like big rabbits but dadgum they were good!

I've had good luck with wild hogs. Low and slow on a smoker is my favorite way.

Life is a journey. Make sure and bring plenty of Beer.

My luck has been so bad lately, it could be raining pussies and I'd catch one with a dick broke off in it.

Use to cook them on a smoker/grill. Had to be careful cause the fat would always want to flame up.

I cooked some wild hog ribs in the over and finished them on the grill and they were delicious. They get fed all through deer season and we usually kill some in Feb and I’m sure that makes a huge difference. They’re good. Idk how they’d be killed in summertime after eating weeds and roots.
I’ve cooked pork chops, sausage and neck roasts from them that were all great.

I think they are good to eat - the fat doesn't render like a farm raised, so I think they are a little drier.

I probably overcook them to make sure they are well-done, but they are pretty good. The tenderloins, IMHO are better than you can buy in a store - I use a temperature probe when cooking.
