According to GROK, it is mainly supply and demand.

Prices have continued rising sharply into 2025–2026 due to a historically low U.S. cattle herd (drought, liquidation, slow rebuilding), strong demand, and tight supplies. USDA forecasts further beef/veal price increases of ~7.5% for 2026.

Drove to the Rockies and back a couple months ago. Feed lots and huge pastures all across the Midwest were empty. Domestic supply has got to be down.

When I can grill a nice 16oz thick cut pork chop for $5-6 a lb; I am doing that several times a month.
Add some jasmine rice and steamed broccoli with lemon/butter sauce and you have a great, easy to prepare meal for less than $10.

Lots of meat animals killed off during Covid for no reason at all thanks to the government shutting down our nation. Animals cost too much to feed and not be processed.

Speaking of pork chops , the one on the plate in back is how they grow them in AK. shocked That thing was FINE! Those were very large plates, BTW. I told the waiter when he brought it out , "my wife ordered a pork chop not a steak," he said " that IS a porkchop!"

China man bought Smithfield and I won’t buy it. Aldi back has been the best lately. Smithfield is fat with some small pieces of meat.
