That looks delicious Irish. I have a traeger but part of my settlement with one of the duck farms when I fixed it up and it sold for a huge profit was a smoker on a trailer. I have been using it with hickory wood I cut. The traeger has not been fired up in nearly a year Mine's obviously a kamado that needs a new gasket...

Most people cook way less time than me. I hav real old smoker - cant get heat as high. Both short and long are probably equally good. Its hard to mess up a butt and just the fact its the main thing i smoke and do it a lot - anybody would be decent at it by now. The community requests mine

My wife and daughter ate the Brisket today. It was small. I decided to smoke a wagyu chuck roast Backwoods Cowboy gave me tomorrow.
Wife doesn't eat pork. I smoked a butt and two racks of ribs I brined for 7 days.
Ate half the ribs. All the brisket today. We will see what tomorrow holds for us.
The brine I use for ribs is absolutely unparalleled for quality ribs. No need for sauce. They are solid without sauce.
Character is not developed in moments of temptation and trial. That is when it is intended to be used.

Just got my smoker going and butts on.
Will be ready about 4am rested and ready to eat tomorrow
Well, the way I see it is there's just too many assholes On a good day there's a bunch of assholes in here. On a bad day there's too many assholes in here.

I agree with Irish. I will do brisket on the offset for 3-5 hours until it gets to about 150 internal. I then wrap in foil and put it in the oven at 275 until it hits 200 internal, then rest for an hour before slicing.
Brisket gets mesquite wood, pork and chicken get apple, pecan, hickory, cherry, or maple. Smoked steaks get post oak.

Gonna fire it up tomorrow, ribs and butt along with a chicken cordon bleu. Wife has me cooking for her friend’s parents. They’re in their 90s wonton gotta be tender.
Bought some chicken stew since church doesn’t start heirs til the 4th. I didn’t realize some use BBQ days in place of tomato base. Lot salt and pepper were added.
