First come up with how much you are willing to spend. Then look at all the options in that range. I personally dont think a rear wheel drive only will be enough to do what a hunting bike would be expected to do unless you hunt flat and dry ground. Even then i think you would be disappointed. Look at 2 wheel drive or mid drive. Next look at components and how easily they would be fixed/replaced if something were to go wrong. Like Squeaky said try to avoid derailleur if possible. Then think about step through vs not… i cant imagine having to step over a non step through would be very fun in cold weather gear. Faceoff gets great reviews but they are very pricey. Ditchbird custom also seems like a solid bike for a little less but still up there. All that being said, i went with a hardcore e-bike maverick. It is a dual wheel scooter built for hunting. It is a beast. It hauled me, a deer in a hawk crawler, and all gear for mile with most being uphill with no problem. It doesn’t have pedals and you can stand or sit/lean on the seat. I cant imagine it not being able to do anything i need it to do. I have been really impressed with it so far. They also just started making a mid drive step through bike that im sure is stout. It is definitely overwhelming when you start looking into them and there are way cheaper options than the ones i listed but hopefully this will give you something to look at and can scale down to whatever budget you have.
