Based off what you said:
For a vest I would recommend the the
Mossy Oak Strap Vest. A couple of pockets and a bird bag.
For a minimalist guy have you ever considered a chest rig? There are others out there that are cheaper but
T&K makes a fine one. Get you a good turkey tote (I might know a guy who can get you a good one) to go with it and you would be in business.
Another one you might like that would be similar to what you are asking about is
