Long drive home yesterday. We dropped the trailer off at my buddy's house. He and his wife fed us some hors d'oeuvres and fixed us some cocktails. They knew we would be tired and hungry.

We made it home at a decent hour, built a fire to take the chill off and I whipped us up some smashburger tacos. We didn't have any sliced cheese so I put some feta cheese on them. These things are easier to make than hamburgers and damned delicious.

So you're placing the raw hamburger on the tortilla and cooking it on there? Why that way instead of cooking it separately? You have peaked my curiosity. grin

I see you managed to slide those toes in a pic again but this time they are "socked". LOL!

Yes. Spread about 1/4 pound of raw meat on the flour tortillas as shown. As far out to the edges as possible, because the meat will shrink. Season it. Then put it meat side down in the skillet or on the flat top. Grill for about 4 minutes and the meat will get done all the way through and kind of crispy on the face like a good smashburger should. Then flip them over, place a slice of cheese on top and cook for about another minute. Pull off, dress the way you like it, fold like a taco and chow down.

I think I'm going to make them Greek next time and season them like a gyro. Top them with lettuce, bell pepper, purple onion, tomatoes and tzatziki sauce. That should be really good.

I'm going to have to try that. I bet the rendering from the meat plays well with the cooking of the tortilla, kind of like making a quesadilla.

I put these in rotation after the last time you posted them. Kids love them.

Only thing i discovered is it is best to use lean ground beef if not the patties shrink up alot and the outside edge of the tortilla gets burnt.
