I had my own processor business for a couple of years. I cleaned and cut my fair share of deer. After dealing with crappy hunters who thought they should get 100lbs of meat off a 80lb doe I said screw it. Plus it was cutting into my own family and hunting time. I spent many of nights until 2 or 3 in the morning in my shop cutting and grinding meat for guys that only complained. I hated it and I was beginning to hate hunters. I said I would never clean another deer after that. I field dress them and gladly drop them off. I don’t care want my guy charges. He does a phenomenal job and I really don’t know how he accomplishes all that he does. He does a lot of deer. And his specialty cuts are out of this world.

I can’t imagine the poorly handled meat you had to salvage.
