Marsh do you eat those snows? Dang right we do!! I’ll eat those before those dry arse Specks. Makes the best gumbo and gravies. People who say they don’t eat them never had the cooked the right way. I bring some to cook at the camp every year during the long January hunt. We told our neighbor that we had brought some snow geese to cook and he said that he was told they weren’t fit to eat. We cooked them in a gumbo and he tried them. Now he wants us to cook them every trip we make. We grew up on the poor side and we hunted all winter and ate ducks and geese all summer. Back then you could do that. Mom taught us how to cook ducks and geese. My favorite is in the brown gravy cooked in an old black pot. Again I’ll pass up shots on specklebellies if snow or blue geese are with them. I’ll eat the specklebellies but prefer the blues and snows. As do most people here the know.

Wish I had specs in my yard We are surrounded by rice fields and this year we have a lot of geese in the area. On foggy or strong windy days you can kill a few flying over the house. My brother and I killed 11 Saturday morning in the fog. 8 snows and 3 specklebellies. I’ll hopefully kill a few more in th morning. Raven loves hunting those geese. She’ll be at the door in the morning waiting to go out after them.

We’d take the rest and the carcasses and give them to some Chinese folks. They loved those things. Like you said they are good eating if cooked properly. I still lied the specs better. I think a lot of the hatred of eating them now simply folks repeating it over and over. Kinda like diving ducks. Southern killed divers are great in gumbo …. Northern killed tasted really good and those Yankees will fight you for a bufflehead/butterball. Taste is dependent on what they’re feeding on. Some of the worst tasting were mallards that’s been eating shad kills due to cold weather. The swamps would lock up and they’d go to the river and feed on those dead shiners.

Marsh we couldn’t ever find anyone who wanted them. Some locals would take some to make sausage but they usually already had plenty

My yankee friends would go up into Canada for a two week stint to load up on the snow geese. They’d kill hundreds of them and prepare them for the return trip. Jerry had two enclosed trailers, one for Canada geese and the other for snows and blues. At the end of season they’d make all sorts of products. Bologna, salami etc……. It’s what they ate year round and after getting some understood why. It was all good.

I've made sausage from snows and it wasn't bad. I still prefer a speck though. Season it, smoke it to rare and sear it to medium rare.......mmmmmm good.

Have to admit that I greatly prefer specks. Have chunked my share of snows through the years. A juvenile snow feeding on rice is pretty good. Nowadays I find someone that wants them.

Where is the best place/time to kill specs? I have been wanting to do that for far too long!
