Any processor I've asked claims to completely clean their equipment between deer.
The amount of investment and work aren't what determine price. The price is whatever people will pay before business drops off. I believe most processors (maybe not all) batch their sausage even if they say they don’t From a business POV it’d be problematic, at best, not to. For consistency sake you’d need to work with a recipe and a set quantity of meat/fat. I’d say any processor that doesn’t require a 25 lbs batch is probably mixing sausage. If I recall right that’s the batch size for nearly all packaged seasoning blends.
