Tikka or Bergara both my Tikkas shoot sub moa but picky on ammo, I spent a lot of $ figuring that out. Ended up being 165 SST and 150 Fusions. The Bergara is less picky. The only thing that’s weird about it is that it will throw a cold bore shot high and left by 3” That's not just weird. That's unacceptable.
My opinions and comments are my own. They do not reflect the position or political opinions of Aldeer or any of the Aldeer administration.

Target rifles? I cold bore sight all my hunting rifles. That first shot is the one that counts on a hunting rifle. Just my opinion of course.

Three inch groups including the cold bore shot isn't worth hunting with.

Another vote for Steyr! My mountain .308 has been my go to for years.

Understand the desire for an accurate rifle but for 200 yards there are a lot of options about any rifle will be accurate enough for 200 yard shooting. I might get a classic or even an autoloader.
Like a Savage 99 or something cool in .308. Old Tang Safety Ruger 77 or.......?
Would NOT buy a junky new gun, Savage, Tikka, etc. Would shoot good but you'd have nothing special IMO. They are all cheap.
I'd get a Kimber or something like that if I had to have a bolt gun in .308.

I got a Fierce Twisted Rival .308 and have been very pleased so far. Muzzle Break and threaded for a can. Retail about $2500 +/- before you put glass on it.

I'd definatley go the "cool" route... something a little different. https://www.gunbroker.com/item/1088836906Old Sako L579s are some cool old rifles.. Last 3 lifetimes, and look good doing it.
You gonna pull them pistols, or whistle Dixie?

Steyr for bolt action, Browning BLR for non bolt action. Henry had a lever action out now that a BLR wouldn’t touch. It’s a better rifle and wayyyy better trigger for less money. In my opinion

In my opinion I bought a .308 BLR- love everything about the gun but as you say, trigger is horrible-compared to the other .308's I own( Fierce is best/ Thompson Center is better as well).

Find a Remington 700 SPS Tactical with the 20" barrel. Both of mine shoot sub MOA to at least 300 yards and no cold bore shift. Put a Timney trigger in or adjust the factory trigger and never look back. Speer 165gr PSPBT or 168gr Hornady A-MAX over 41.8 grains of IMR 4895 in Lapua brass set off with a CCI 200 primer shoots one cloverleaf at 100 yards.

Get the F out of the BATFE. The F is guaranteed by the US Constitution. Those other letters are not.
