Assuming we are talking about a low voltage led light, I’d use an outlet on that switch and plug the transformer into that. Hiding the low voltage wires inside the cabinets is pretty easy. Getting the outlet hidden and out of the way is the tricky part.
As for the light itself, I used a strip of lights and put them in an aluminum channel with a diffuser. You can cut the strips every half inch or so, if I remember right. Works great.
Amazon is full of the led tape strips, some come with the transformer and a dimmer switch.
