In most cases you have to follow the good dirt to find trophy deer like in along the Mississippi River and a small area along the Tombigbee River around Columbus MS. While there are always exceptions, most of deer hunters in Mississippi hunt "deer" and the bucks simply do not live long enough (> 3.5 years old) to produce a quality rack. Mississippi has lots of deer and a very long season. Baiting is legal in MS so if all you are after is some venison - make sure you have some corn.
The rut is very crazy in Mississippi as some places it hits late November and other places it does not start till late January or early February. South MS has a late rut, so the season is open till mid February. Read the hunting regs closely!!!
The primitive weapon season is also different. They have a statewide prim weapon season in early to mid December (13 days) and another that starts mid January to the end of Jan. On public land you can use archery, black powder and straight walled guns (444, 45-70, 350 Legend etc.) but on private land you can use weapon of choice (30-06, 270, 7 Mag, shotgun and etc)
Good luck. Primitive weapons are not straight walled cartridge guns in Ms. The reg says single shot 35 caliber or larger with exposed hammer (35 Whelen is legal)
