It's mold growth and if you aren't running the HVAC at a decent temp to strip moisture from the air, it's gonna take off and cost big $ to resolve.
Don't ever let a house sit empty with no HVAC on.
Character is not developed in moments of temptation and trial. That is when it is intended to be used.

Mold needs 3 things to grow:
Moisture (stagnant air that's not being turned over periodically will lead to enough moistur to facilitate microbial growth)
Food source (any organic material, even dust)
Temperature conducive to growth
(A 4th but less important is lack of light because molds will grow in areas with some light)
If you want to try not running the HVAC, then at a minimum run a couple of box fans...even better with a dehu piped to a drain or outside). Running the HVAC is the best option...just enough to turn the air over a few times daily.
Other environmental conditions may impact things such as insulation, vapor barriers, etc.

A large enough dehumidifier will work. As others have said make sure it's set up without having to dump the reservoir. The house still needs air movement. Either central ac fan set up to run periodically or maybe ceiling fans/ circulating fans. Mold also doesn't like sunlight
