Not to derail but not just with oysters, a lot of food makes people sick now days. I'm in my 50's and just don't really remember people getting sick all the time from eating whatever. What has changed? All the preservatives? What has changed are the number of people handling the food and the number of different environments the food goes through before the food gets to your mouth. It used to be one maybe two guys getting oysters out of the water and tossing them in a sack, then maybe a waitress pre-shucking them for you all in the same 24 hour period. Now, who knows how many different hands, machines, trucks, temperature changes, etc... they go through before you them. All it takes is one germ along the way to get you sick. Think about that big pallet of frozen pizzas at Walmart sitting in the aisle waiting to be shelved. That pallet may wait a real long time before it goes back to safe temperature, and how many times between the factory and Walmart did that happen? Try dat. But i remember hitting the Salt Water to cure any cut or sore you might have, them days have been long gone. We lost a good frien last month (was also our foreman) he got stuck in the hand by a redfish one trip, he had several surgeries (after being missed diagnosed for over a year) and never was the same, he got diagnosed with cancer 3 months ago and went fast. The Lawd knows we've kilt our rivers and creeks with pollution for sure 😔
