Oh you definitely save the sauce for dipping. I could drink the stuff.
3ish pounds of roast meat 4 cups beef broth 4-6 dried guajillo chiles. 3 Tblsp apple cider vinegar 2-3 dried ancho chiles. Salt/pepper 4-5 dried chile de arbol. 1 Tblsp oregano 2 chipotles in adobo sauce. 1 tsp cumin 1 can fire roasted tomatoes 1 tsp coriander 1 large onion. Olive oil 6-8 garlic cloves
I use an instapot, but you can do it in a dutch oven too. I did add a stick of butter to the deer roast since it is so lean to make some oil for the tortillas to cook in.
Turn the instapot on saute and heat up some olive oil Cut the roast up into 3-4” chunks and generously coat all sides with salt and pepper Put half of the meat in the pot at a time and brown all sides Heat the beef broth to a boil Take out the seeds and stems of the chiles and add them, the chipotles, tomatoes and spices to the boiling broth. Cut the heat off and cover to let the chiles steep for 10-15 minutes Once all the meat is browned, take it out and add a little more oil to the pot and the onions. Cook them for about 5 minutes and then add the chopped garlic. Cook the garlic for a couple minutes and put in a few Tblsp of apple cider vinegar and scrape all the bits off the bottom of the pot while it steams. Pour in the chiles and broth into the onions and blend up with an immersion blender. Add the meat back into it and set the pressure cooker for 50 minutes. Once the pressure is released, pull the meat out and shred it I dip some of the sauce out into a bowl and then skim the oil off the top of it to put on the tortillas before they go on the griddle Pour however much sauce you want onto the meat or if you are going to eat most of it at once just put the meat back into the sauce and dip your tortillas straight into the pot. Fry them on one side, flip them and add some meat and your choice of cheese I make them like a quesadilla, but you can just use 1 tortilla and fold it like a taco. Brown them up good, and add some onion and cilantro if you like Dip them in the sauce and try to keep your tongue from beating your brains out.
