I don't have a fancy smoker, so when I wanted to smoke a mallard from last winter, I had to try and convert the 'ol trusty Weber kettle into one. It worked great! ![[Linked Image]](https://i.imgur.com/xYvpYtu.jpg) I made up a simple pickled mix of scallion, thinly sliced cucumber, and julienned carrots. Added some sugar and rice wine vinegar and a dash of sesame oil then let it sit. Fine meal right there.
My son has got me eating alot of his duck lately, even had some Gadwalls that were delicious. Guess it depends on what they are feeding on?

My son has got me eating alot of his duck lately, even had some Gadwalls that were delicious. Guess it depends on what they are feeding on? That and how they are prepared. This duck was brined and marinated before smoking. It was also cooked to about 145 internal temp and pulled. Most people skip the brine and/or overcook.

Friend and I were talking at the gym early this morning about that duck, and I’ll have to agree with him and your shows it we’ll trout bum. The fat ……. Leave the fatty skin on for moisture and flavor. Hot skillet, coarse salt, pepper, little garlic powder and cook it like a skillet steak and that’s what y’all get if not overcooked

The fat is so good. I also save the carcasses and make stock for gumbos, etc.
