For skinning- I like smaller folding pocket knives (I have a Case that I like). I don’t use it for gutting, breaking the pelvic bone, or sternum though.

F. Dick or Victorinox lamb skinner is by far the best knives I’ve ever skint with. Keep the F. Dick polished steel handy and pass the knife in it to keep the edge on it.

I've watched Mark Mims professionally cape many a buck on the tailgate of a pickup truck with a pen knife. Judging by how many times he hit the sharpening rod with it he must go through several knives a season. He says he prefers the small knife and the tailgate method. Who am I to argue with a pro?

Tops Camp Creek. Cleaned an elk and deer solo without sharpening. My outdoor edge knives with replacement blades are nice but not needed if i have that Tops knife with me
