I have been to Gibsons and it wasn't great but not terrible. I like some bark with my Q so that in the picture would be fine by me, but I agree with what your perception of the sides would be.

Gibson's lives off the reputation of their White sauce, which I don't particularly care for.

so is Gibson's BBQ the place where Big Bob Gibson's BBQ sauce comes from? (several flavors of this sauce, sells at winn dixie and other stores)
