pros, cons, opinions ? hunting vs targets?

Cons.....none. Pros.....always knowing you've got your bow level. You don't always get to use perfect form when shooting from a treestand. A level on your sight is just a little extra insurance.

Levels can be very useful especially when learning to shoot or getting used to a new bow set up. The level will aid in proper form and grip which is crucial for consistent accuracy. They are probably more beneficial on shorter axle to axle bows and bows with shorter brace heights which tend to be less forgiving on errors in proper form. I have used them before, but do not have one on my present hunting set up. I'm not a big tournament 3D shooter, so Ican't speak that aspect...I tend to shoot too low on those non flinching deer to score well.

Using a level is the best way to stop having left and right misses.

Even if you don't look at your level in a hunting shot situation, they are invaluable during all of the practice time leading up to the season. They serve as a great trainer for you to automatically hold the bow level every time you draw it. If I've got time, I still give mine a cursory look prior to a hunting shot. But, if it's a quick shot I'm confident that my bow will be level at release because it has become so engrained.

Levels work great if your bow's centershot is tuned correctly first and then the sight is installed properly. It helps you know the bow is being held properly....especially while shooting on sloped ground.
