Cut in to chunks
Soak chunks in Louisiana hot sauce for at least 12 hours
Take chunks out of hot sauce
Put chunks in to flour seasoned with salt and pepper
Fry at 350 until they start to float

By far my favorite way to eat them.

Back when we killed a couple turkeys the best way we found was to take the breast and the thighs and make a good Cajun rice and gravy. We also took some and made a jambalaya with it. It was great. We tried frying and Bbqing them also. Frying wasnt to bad but that was some dry chit on the grill. We found out quick that them ain't no butterball turkeys. I would bet than old dried up jersey cow is about like eating them BBQed.


It's hard to kiss the lips at night that chews your a$$ all day long.

Cut turkey in chunks. Open a can of pineapple drain juice in bowl with juice from 1 lime. Marinate turkey for 30 min in juice. Cut bell pepper and add to pineapple with another juiced lime and cilantro. In skillet add a little oil with turkey and pineapple mix and slow cook for 20 mins or until done. Serve over a plate of rice.

Anyone had any luck smoking one? I think my first bird of the year will get one lobe smoked and the other will be jerky.

Yes. I smoke em all the time on my pit boss pellet grill. Cajun injector marinade then smoke for 3 hrs or so. Good good

My dad's favorite was to slice the breasts cross-grain at about 1/2 to 3/4 inch. Bread and brown both sides. Then put in a roaster with celery, carrots, potatoes, and cream of mushroom soup. Bake covered until veggies are done and partake. If it is a little too much liquid from veggies take the lid off for last 20 min. to evaporate some of the extra off. My kids and wife love it too.

My favorite is veggie soup made from the thighs. Then I have the breasts to cut in strips and fry.

I made jerky out of couple of them this year and they were some count.

Cut breasts into strips and toss with worchestershire and honey, and toss with garlic powder and a little Slap ya Mama.

Toss onto a hot grill and work quickly. Won’t take long, couple minutes a side at most. Get some color on the strips and pull them.

Place legs and thighs in crock pot and completely submerse in water. I cook on low for anywhere from 12 to 24 hours depending on the age of the bird. I place crock pot in garage because it does not smell great. The bone will turn white and the meat will tear easily off the bone. I then take the meat and shred thoroughly in a metal mixing bowl. If you have an errant pellet while shredding you can hear the shot and remove. Add salt and black pepper to your taste. I then add 2 tablespoons of mustard, pickle relish, dice up a whole onion and use mayonnaise or Smart Balance to get the consistency of a chicken or tuna salad. Serve chilled with crackers and I promise you will never discard the dark meat of a turkey again!

I also use the dark meat and prepare dumplings ( same as chicken and dumplings). Dad taught me to not waste anything you killed.

I grill a lot of mine like chicken. The key is to BRINE it.

Get you about 2-3 cups of water boiling. Mix in brine solution of 1/4 cup salt + 1/4 cup sugar. Once dissolved, pour brine into a larger pot of cold water. Put in just enough water to fully submerge turkey. Once solution is cooled, add the turkey. Let breast (or breast pieces, I normally cut up each breast into ~5-6 pieces) soak in brine for at least 12 hours. Remove from brine, pat dry, add seasoning/marinade. Then grill just like you would chicken.

I also brine mine before I cook it using other methods as well. Trust me, try the brine no matter how you cook it!

This. I would only add that I use chicken broth instead of water. The stock can then be saved for soups/stews.

While I am a fan of the water and ice recipe mentioned earlier, here is my favorite wild turkey recipe, " take one dead wild turkey, while on the way to give it to someone who eats them, stop at Bob Tew's store in Headland and get the two chili dog special, add hot sauce to chili dogs to taste, enjoy chili dogs with soft drink, when finished with chili dogs, continue to destination to deliver dead wild turkey". Feel free to use this recipe or pass it on.
