I use red guard. one thing you cant see in the pic is when you bolt down the the pvc membrane to the drain I silicone the bottom of the membrane to the drain then red guard the top of the drain around the perimeter. At this point the shower is fully functional. The tile is just a veneer. Looks like how I do them except before the red guard goes on I cover all seams and screw holes with fiberglass tape and a thin smear of thin set. Then redguard paying extra attention to all corners. And you are right that you need to take your time on the clamping drain to make sure you dont cut it too short. Your shower looks great!
