I was given 2 backstraps that have been vacuum-sealed and left in a deep freezer....one is probably 3-4yrs old, the other is, well, older than that (I don't know just how old it is, but it is minimum of 5yrs old, could be more). They are both still air-tight, the vacuum seal never separated, and they're both good dark red in color.
Would you try cooking them up or throw in the trash?

go for it and let us know what happens You know....I'm tempted. I'm not really scared of the one that is 3-4yrs old. I've cooked and eaten 3yr old venison before with no issues. As long as it doesn't smell when I thaw it, no problem. The other one, well, I'm a little more wary of that one.

Gomer I saw a thread on this recently, I think it was Bowsite, and those gents were eating stuff easily that old that had been vac sealed or well wrapped (double wrapped) with butcher paper. If I have some time later I will look for it and post a link.

if it ain't freezer burned it's fine I've ate crappie frozen in water filled ziploc bags after 5+years. even if it was a little freezer burned you can trim it off. meat will keep indefinitely if it's hard frozen it cant grow bacteria only thing that would degrade is the quality from freezer burn. I wouldn't have no problem eating it if it was 10 years old

If it was 2 or 3 I'd say do it... If it was 2 or 3, I wouldn't have even asked....we regularly eat 2 or 3yr old venison as long as it's airtight and no freezer burn.
