Update: cooked the 3-4 yr old back strap yesterday.....brushed it with EVOO and sprinkled with kosher salt and coarse ground pepper, grilled medium rare. It was as good as any I've had. The older one we determined was probably closer to 6 or 7 yrs old...it found it's way to the trash instead of the grill.
