Coon meat is greasy but makes a good hash. I've had it cooked with sweet potatoes several times, cooked by several different people and have never cared for it cooked that way. It's also decent grilled.
Possum is not as greasy as coon or as dark. I've only eaten it grilled then deboned and smothered in BBQ sauce.
I sale 50+ coons a year from my trapping. $10 apiece just as fast as I can catch them. Could probably sale 300 if I had time to catch them. Always leave one foot on.
