Lengua doesn't have an odor when prepared properly. Maybe they gave you tripe instead. Because tripe sucks and smells like sh*t.

Cabeza - beef cheeks - is super. Tender, flavorful, like a great pot roast cooked slow for hours.

Jawbone if you ever get to Jemison we have an authentic Mexican joint, it sit's right next to the Chevron at the red light where you turn off of 31 on to 191, The food is freaking great and it is for real Mexican food..

It might have been a mental thing just knowing I had cooked beef tongue in the seat next to me..Either way it went in the garbage.

My best friend's mother growing up in Casa Grande AZ was Mexican. Her family were big ranchers in S. Texas. She looked like and came from a similar background as the character Maria on The Son. Anyways, a staple in their household was beef tongue. I saw her many times wrap one in foil and cook it like a roast. I was offered often, but never could convince myself to try it.

Also of note, is the fact that her family were legal as original settlers of Texas. She was the first person I heard use the term "wetback" to refer to an illegal Mexican. She spoke of them very dismissively talking about them working on her father's ranch. At the same time she taught her sons, and me through them, not to use that term as it was offensive. looking back on it, I don't think she did it to be offensive, but that was just the way her family distinguished legal Mexican Americans from Illegals. Through her eyes they were two different class of people. My friend, who is half Mexican/American oddly enough is an attorney who works for ICE now.

If I am in Jemison, I will try the Mexican restaurant there, but I don't have high hopes. Like I already said, it is not the cooks, but unless they can get produce and seasonings from out west, it won't taste the same. A Hatch Chili is like no other. Think comparing a Sand Mountain tomato or a Chilton County peach to ones grown in Minnesota. It matters.

I've seen the taco stand in Clanton but haven't gone by it when I was hungry and brave but will give it a try one day. No tongue sandwich though.


Lord, please help us get our nation straightened out.
