Penzeys makes an English Prime Rib Rub that is outstanding. If you have a BGE, I highly recommend doing a reverse sear for this cut of meat. Meaning: smoke it at 225 until about 5-10 of your target internal temp, pull it off and rest it while you ramp the BGE up to 500-600 degrees. Put the roast back on for 5 mins or so until it's crispy on the outside. Yep.
