I love heart. Cook it like you would any other tender muscle. I like to marinate, wrap in bacon and grill it.

You can also pan fry it or deep fry it.

It has an awesome flavor and texture.

It's the steak of the gut pile. I usually trim mine up well and cook if like fajitas. Really recommend it.

great. trim very well. cut into thick strips and grill just like you would tenderloin. or, cut into chunks, pound to make a little flat, then shake in bag with flour and cayenne and pan fry in butter. wow!

if you throw away you are making a mistake. Liver is also good but smells a little but if you soak in vinegar not so bad.
