The nattering nabobs of negativisim, to quote Lyndon Baines Johnson the author of the Great Society, have not deterred me. I will keep posting food!
Tonight I marinated organic chicken breast in olive oil, the juice of one lemon, garlic powder, onion powder, salt, pepper, red pepper flakes, parsley and Italian seasonings in a ziploc for about 2 hours while Mrs. Irish and I enjoyed drinks on the back deck.
While I was doing that Mrs. Irish sliced some fresh organic cucumbers, tomatoes and sweet onions. To that she added oil, vinegar, salt, pepper, sugar and marinated them for about 2 hours as well.
She then made us a nice little plate of wheat crackers, Irish sharp cheddar, and peppered salami...
When about 1.5 hours was up we sauteed some dry rice in a pan of butter and oils an then added chicken stock instead of water and put the chicken on the grill...
Drinks for the evening were Old Forrester 100 proof and Tito's vodka with lime and seltzer.
All parties left happy...

Mrs. Irish put the marinated salad on top of some fresh organic spinach greens and topped everything with some feta cheese...
We had to eat healthy tonight, because Mrs. Irish's girlfriend is coming over tomorrow night and we are doing fillets on the cast iron skillet with a bottle of Bulliet Rye... Stay tuned!
