Seems like red pepper flakes are a go-to for you. When do you go heavy vs light? I rarely use them... It seems like heat really wakes up your taste buds no matter what the food, so I put them in most every thing now that I think about it. It's probably one of the 4 spices I used most along with garlic, salt and pepper. Most of the time I don't go too heavy with them. If you get too heavy handed your family will tell you really quick.  Red pepper flakes will get a dish really hot really quick. You just need to start experimenting with using them, but start out with a little and kind of work up...
