Good stuff, we cooked up 3 birds yesterday and had dinner with the neighbors. I love fixing it and making it buffalo style.

I did that a few nights ago at camp. Cut into nuggets across the grain, soak in buttermilk, roll in spicy brown mustard, batter with flour (with some zattarans mixed in) and toss in the fryer until you hear the grease slowing down. Dip Em in some Texas pete honey mustard and try not to have a gasm

FYI, chop up some onion and drop it in the basket with them, keeps the grease from burning.

Chunks, buttermilk then
50/50 parmesean cheese and cornmeal
Add black pepper and some tonys to the mix

Lowrys seasoning salt as it comes out of the grease and dip in Kens honey mustard


Give me bout 15 more minutes, I was dreamin about beavers..........

Soak mine in buttermilk for an evening then dip in wing sauce tossed in flour into the Frydaddy at 325 and dip in a mixture of brown mustard and honey! Kids eat them so fast I have to eat them as soon as they come out of the grease!!!
