Onion
Black pepper
Mashed saltines
Salt
1 egg per can
1 can salmon

This is the general outline. Wife made them, fried potatoes, corn bread, and pintos last night

I don't have a real recipe but I make some that aren't fried, or I guess more correctly they aren't deep fried.

I mix a can of salmon with 1 whole egg 3 egg whites, a small dollop of pickle relish a spoon full of diced garlic and stir in equal parts cornmeal and flour until it gets thick.

I sprinkle the bottom of a medium sized skillet with olive oil, just enough to coat the bottom.

I then dump in the whole bowl of the mix and mash it out flat, covering the whole bottom of the skillet. Once the bottom gets browned I flip it over and brown the other side.

It's healthier than fried salmon patties and is just as good to me.

Thanks guys, i've been craving them for a while now and just wasn't real sure how to make them. Think I'll make some tonight and have some tomato soup to go with em.

I use a can of Salmon,2 eggs and as little flour as i can get by with to make them stay together.

Lightly oil the skillet and spoon out the mixture.

Sometimes I add some onions, bell peppers, and grated cheese.

I like them too but you smell them for days after you make them in the house.

I cooked some on my BGE last year.
Turned out awesome.
I've got a cast iron fajita plate or something like that. I put a tablespoon of bacon grease and started dropping patties.

Trying this tomorrow. I'm guessing about 400 degrees with a little peanut oil in the dish.

I use extra-fine corn meal instead of flour or crackers...and in a pinch, you can use Jack Mackerel instead of salmon...just as good. Also, I don't deep fry, either...just enough olive oil to coat the bottom of the skillet, and GO!

I went about 400 but I never paid much attention when I shut the lid so I couldn't tell you the exact temp.
I used just enough grease to keep the pan coated plus a little extra.

They were good. The next time I'll spice the mix up a bit more, more salt and pepper and maybe some Italian bread crumbs. 400 degrees was about perfect with a thin layer of olive oil.

White perch? You sound like a Yankee. I've never known a Yankee to give good cooking tips.

Take a pack of smoked pink salmon and drain it. Crumble the salmon in a bowl. Salt and pepper to taste. Blend in one egg, a tablespoon of brown mustard, a teaspoon of lemon juice, and a quarter cup of bread crumbs.

Form into patties and press into a plate of more breadcrumbs to coat on both sides.

Cook in a skillet with a few tablespoons of olive oil till browned on both sides.
