I love them. I make my own and add crab boil to the vinegar to spice things up.
Quail eggs are awesome, but them little sunny beaches are a real PITA to peel when boiling, so I normally just use the regular ol' chicken eggs.

Never true em. Father in law was just talking about how good they were on Christmas Eve. Doesn't sound like something I'd like. I used to eat those Penrose hot sausage in the jar when I duck hunted but hadn't seen them in years. I don't know if they even make penrose sausages anymore, but the ultimate pickled egg is made in penrose sausage juice after the sausages are all eaten. When I was at Auburn, I used to work at a little beer joint out past the War Eagle Supper Club, The Tiger. When the big ol jar of penrose was empty, the owner would boil eggs, heat up the remaining liquid in the jar, put the liquid back in the jar, then add the boiled eggs. Let em soak a few days, and there you have it, pickled eggs

I love them. Dad makes some fine pickled eggs. I need to get him to make some more. He puts jalapeños and carrots in with the eggs.

Trick to a good pickled egg is beet juice. I HATE beets, but something about the juice that makes a picked egg SMOOTH. I went to Ohio visiting relatives and went by a place that sells them and hoop cheese and beef jersey. Best picked eggs ever and the lady gave me the recipe.

In a saucepan, make a mixture of equal parts vinegar & water (enough to fill the jar). Add a couple of cloves of garlic and a few slices of onion to mix, as well as a little crab boil if you like spice. Bring to boil. Strain as you pour mixture over eggs and fill jar to near the brim. Put lid on it & stick it in the back of the fridge for a week before eating.

Pickled quail eggs are even better ' Yes they are. I used to eat them with a dash of Tony Chachere's Creole seasoning. Getting hungry just thinking about it.
